Instead of a wedge of sickly-sweet cream cheese doused in berries – OK, it does sound pretty good, maybe have one of those for pudding as well – why not try a savoury cheesecake?

This one has the heft of gammon chunks and the zing of lemon – serve with a big, peppery salad.

Savoury gammon cheesecake

A savoury take on a classic cheesecake

  • Food processor
  • Bowl

Ingredients

  • 200 g Ryvita Sweet Onion Crispbread
  • 300 g soft cheese
  • 100 g mascarpone
  • 100 g chopped cooked gammon
  • 1 lemon zest and juice
  • 100 g melted butter
  • black pepper
  • parsley

Method

  • Line a baking tray with greaseproof paper and place 4 x 7cm chef rings onto the baking tray.
  • Using a food processor, blitz the Ryvita crispbread. Add the melted butter and mix until all the butter is stirred in.
  • Place the mixture evenly into the chef rings and ensure the it’s firmly pushed down, creating a Ryvita crispbread base.
  • In a separate bowl, add the soft cream cheese, mascarpone, gammon, zest of lemon and juice. Mix thoroughly until smooth. Add black pepper to season.
  • Divide the cheese and gammon mix evenly between each chef ring and layer on top of the Ryvita base. Level the top off with a knife.
  • Place in the fridge for at least two hours before serving, then garnish with parsley.
