Kiwis are an underrated fruit which has loads of potential for brightening up dishes.
These kiwifruit and tofu steamed buns by Zespri™ are light and fragrant, with a hint of sweetness from the SunGold™ kiwi, making it the perfect side dish to serve alongside other Asian staple dishes.
Kiwifruit and Tofu steamed buns
Equipment
- Steamer
- wok or pan
- Frying pan
Ingredients
- 2 Zespri SunGold Kiwifruit
- rainbow carrots sliced
- radish sliced
- coriander
- 6 pre-made buns for steaming
- tofu either pre-sliced and marinated or smoked
- siracha mayonnaise
- 1 red chilli sliced
- peanuts crushed
Method
- Slice the kiwis and vegetables and roughly tear the coriander.
- Cut a circular piece of baking parchment big enough to fully line a steamer.
- Over a pan of boiling water place the steamer with the buns inside and cover with the lid for roughly 8 minutes.
- While the buns are steaming, fry the tofu in a little oil on a medium heat, turning every so often until crispy.
- The buns should have risen and be light and fluffy looking. Remove them from the steamer.
- Fill the buns with the sliced vegetables, the tofu and the kiwi. Drizzle in the sriracha mayonnaise and sprinkle with coriander, chilli and peanuts.
- Serve immediately.
